Toasted Oatmeal Cookies – for the first day of Ski Bus!

Today marks the first day of ski bus.  AND, we’re told there will actually be snow!

We’ll see! 

I slightly modified these oatmeal cookies – and doubled the batch – from the vintage 1963 McCall’s cookbook .  This thick red volume was my Mom’s favorite go-to cookbook when I was a child.   I’m delivering them to the kids for the bus ride up the mountain!

Toasted Oatmeal Cookies

3/4 C Butter
2 1/2 C Raw, rolled oats
1/2 C sifted all purpose flour
1 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1 C light brown sugar
1 egg
1 tsp vanilla

Preheat oven to 375.  In a medium skillet (I use cast iron) over medium heat, melt butter until lightly browned.   Be careful not to burn.  Add oats, sautee, stirring constantly, until golden – about 5 minutes.  Remove from heat, cool.  Meanwhile, sift flour with cinnamon, salt and soda.  Set aside.  In large bowl, combine sugar, egg and vanilla.  Beat until light.  Stir in rolled oats and flour mixture until combined.  Drop by slightly rounded teaspoonfuls, 3″ apart, onto ungreased cookie sheet.   Bake 8 – 10 minutes or until golden brown.

  2. When my mother made these she added raisins that she had soaked in hot water — they were very good! Sometimes she added chocolate chips instead. But always walnuts. I like them plain like yours best
