I have tried several recipes for lemon bars. This one is simple, slightly different than most but I love it and it executes perfectly. Lovely on a January afternoon when we finally see the sun peeking out here in Seattle.
1 Cup of softened, unsalted butter
2 C Sugar
2 1/4 C All Purpose flour
1 tsp vanilla
2/3 C Organic Lemon Juice (or fresh squeezed)
Heat oven to 350. In a mixing bowl, cream together the softened butter, 1/2 C of the sugar (set the remaining aside), 2 C flour (set remaining aside) and vanilla. Once mix pulls together in a dough, press into the bottom of a 13×9″ pan. Poke with a few fork holes and bake 20 minutes at 350. It will look slightly light brown. Remove from oven and allow to cool. Whisk together eggs, 1 1/2 C of sugar, the remaining 1/4 C of flour, eggs and lemon juice. Pour whisked mixture over your baked crust and return to heated oven for 20 minutes. Allow to cool and dust with confectioners sugar.
