Vanilla Brown Sugar Scones


I took these to work and they disappeared within minutes.   Typically I make these in spring to serve with strawberry shortcake, but they are also wonderful with homemade preserves, or in this case a choice of preserves or Highway 20 Honey from the Methow Valley.

Vanilla Brown Sugar Scones

2 C All Purpose Flour
1/3 C Brown Sugar
1 tsp baking powder
1/4 t baking soda
1/2 t salt
8 T unsalted butter, frozen
1/2 C sour cream
1 tsp vanilla
1 large egg

Mix flour, sugar, baking powder, baking soda and salt.  Mix sour cream, vanilla and egg in a small bowl, set aside.  If you have a Cuisinart, use this for the scones by putting dry ingredients in Cuisinart first.  Next, cut in the frozen butter until crumbly.    Add wet ingredients, pulsing until dough pulls together.

Place dough on lightly floured surface and pat into an 8″ circle.  Sprinkle top lightly with sugar.   Cut into 8 – 12 triangles.   Place on parchment or silpat about 1″ apart and bake 14-15 minutes at 400.
