Cardamom Spiced Bundt Cake with Lemon Glaze


I love cardamom.   This cake was wonderful and it served as breakfast for several days here.  The spiced ‘ribbon’ baked out to the crust so there was this crunchy sweet layer on the outside of the cake.  Very good!
Cardamom Spiced Bundt Cake with Lemon Glaze

3 C Cake Flour
1 tsp Baking Soda
1 tsp Baking Powder
1  C Sugar
1/2 C Brown Sugar
3 eggs
3/4 C Butter, softened
2 t vanilla
1 C Plain Greek yogurt
1 tsp cardamom

Streusel Swirl:
1/4 C Sugar
1 tsp Cinnamon

Lemon Glaze:
1 C Powdered Sugar
1 T Pure lemon juice
dash of milk or water as needed for consistency

Preheat oven to 375.   Generously grease and flour (or coat with nonstick) your Bundt pan.   Combine your dry ingredients and set them aside.  Next, beat your sugars and eggs until light & fluffy.   Add butter, and yogurt and beat until smooth and combined.  Add flour mixture and then vanilla.   Separately, mix together streusel swirl ingredients.   Place half the batter in the prepared pan, sprinkle with the streusel mixture and then place the remaining batter on top.  Bake for 40 – 45 minutes or until cake springs back quickly from touch and is golden brown.   Cool for 8 – 10 minutes and then turn onto a serving plate.   Cool completely and glaze with lemon glaze.
