Warm Salted Bread Sticks


These are from my old favorite hippie book, “Bread Baking” by Nitty Gritty productions, 1975.   Love that worn old book.monkey3

I changed the recipe a bit by adding the cheese on top – I think these would make good cinnamon and sugar sticks also (by sprinkling coarse sugar or cinnamon in place of cheese) and wash with soy milk instead of egg, add kosher salt only?  They’re vegan.


Bread Sticks

3 C Flour1 T Sugar
1 tsp salt
2 – 1/4 tsp active dry yeast
1/4 C olive oil
1 – 1/4 C Very warm water (125 degrees)
Kosher Salt, Parmesan cheese (optional)
Glaze – soy milk or 1 egg white lightly beaten with water

Heat oven to 325.  Place 1 C of the flour, sugar, salt and yeast in a large bowl of a standing mixer.  Add oil.  Gradually stir in warm water and beat about 2 minutes.   Add 1/2 C flour, beat at high speed another 2 minutes.  Continue to add flour in small amounts until you have a soft dough.   Turn out onto a board and knead for several minutes.   Shape into a log and cut about 20 equal sized pieces.   Roll each piece into a rope about 6 – 8″ long.   Sprinkle olive oil on your silpat on a baking sheet and “roll” each piece through the olive oil.   Cover and allow to rise in warm place until puffy – about 15 or 20 minutes.  Paint each stick with glaze and sprinkle with kosher salt (and Parmesan if you are using).   Bake in 325 oven for 25 to 30 minutes until browned.
