The kids loved these. I’m always looking for something new to put in the lunch boxes. These came together really easily and it was simple to cut a few off and bake them in the morning also. They’re rich! A couple of these go a long way. I used a Martha Stewart recipe in a vintage cookbook, and altered it a bit.
Pecan and Blue Cheese Lunchbox Crackers
3/4 C Pecan Halves (about 2 oz)
1/4 C Emmer Flour
1/2 C All Purpose Flour
4 T chilled, unsalted butter
3 ounces blue cheese, crumbled
Heat oven to 375. Line a baking sheet with parchment and place your pecans on the sheet. Bake 3 – 5 minutes until golden brown and fragrant. Cool and transfer to a cuisinart, and then pulse until they are finely ground. Remove from cuisinart. Add flour to cuisinart, and ground pecans back in. Add black pepper to taste and pulse a few times. Add your chopped, chilled butter and pulse 8 – 10 times, and add cheese. Pulse until mixture pulls together. Shape into a 2″ log and chill for at least 24 hours. When ready to use, slice thin and place on parchment lined baking sheet. Bake 25 minutes at 325, and cool completely before eating .
