Buttermilk Griddle Cakes!

Buttermilk Griddle Cakes!   I have a long-time favorite recipe from Allrecipes for Clark Gable Pancakes – I’ll be honest, I mostly chose it for the name originally but it does make good pancakes.  I was looking for something different and decided to dig through my old cookbooks.  Here, in the 1948 American Woman’s Cookbook I found a gem.

Buttermilk Griddle Cakes

2 C Sifted Flour
1 tsp salt
1 tsp baking soda
3/4 tsp baking powder
1 T Cornmeal
1 T Sugar (I used brown sugar)
2 eggs
2 C buttermilk
1 T melted butter, unsalted

Sift flour with salt, baking soda, baking powder, cornmeal and sugar.   Beat eggs and add milk and melted cooled butter.  Add sifted ingredients to mixture and beat until smooth.  Drop by spoonfuls onto a very hot griddle.   When cake is full of bubbles, it’s time to flip the griddlecakes and brown the other side.  Makes about 20 small.

 

buttermilk3When you see bubbles, it’s time to flip.  These are probably 30 seconds from ready to turn.
