These are very easy to make. I baked them for a special event at my children’s school – they will be incorporated into a parfait with Skyr (Icelandic yogurt) as part of a cultural festival! But it was very difficult to keep small (and big) hands out of the cinnamon grahams until show time.
Cinnamon Graham Squares
1 – 1/2 C All Purpose Flour
1 – 1/3 C Graham Flour (I use Bob’s Red Mill)
1 tsp Baking Soda
1/2 tsp cinnamon
Pinch of Kosher Salt
1 C unsalted butter, room temperature
2/3 C Dark Brown Sugar
2 T Honey
1 T Molasses
Mix your dry ingredients together and set aside. Cream your butter with sugar, honey and molasses. Add the dry ingredients slowly until dough pulls together. Form a long square log of dough and wrap with plastic. Chill for at least 2 hours or up to a day or two. When you are ready, pull the “log” of dough out and slice with a very sharp knife about 1/4″ apart. Place directly on a cookie sheet lined with parchment or silpat, and bake 350 for 14 – 16 minutes.
Ingredients are first mixed, and you can see as they pull together.
