Hot Cross Buns!

1 Package (2 1/4 tsp) Active Dry Yeast
4 C All Purpose Flour
1/3 C Sugar
1/2 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
1 C milk
1/4 C butter
2 eggs
1/2 C Currants
1 T lemon zest

Combine yeast, 1 C of your flour, sugar, salt, spices in a mixing bowl.  Heat milk & butter to 125 degrees.  Pour over the dry ingredients and beat until smooth.  Beat in eggs, one at a time.  Gradually add the remaining flour, beating well.   Mix in the currants and lemon zest.  Turn out onto a floured board and knead until smooth and satiny.  Place in a greased bowl and leave covered in a warm place until doubled in size.   Turn dough out onto a floured board and knead gently.   Tear off golf-ball sized pieces and roll between the palms of your hands.  Place on a lightly greased baking sheet.   Cover and let rise until doubled.  Just prior to baking, with a very sharp knife, cut a cross on the surface of each bun.   Bake at 375 for 15 – 17 minutes or until golden brown.  Let cool on a cake rack.   Glaze along the cross-mark with a blend of 1 C powdered sugar, 1 tsp lemon zest and about 1 – 2 tablespoons of milk.   Makes about 2 dozen.
